To create wines entirely by our own hands. Every step, from pruning to disgorging, is carried out by the family, without outsourcing any part of the process. This way, we ensure that each bottle reflects our understanding of wine and our respect for the land.
At Baldús, we believe that true quality can only come from closeness, to the vineyard, to the craft, and to the people who appreciate the beauty of things made with purpose and patience


The story
Today, the 13th generation of the Jané family continues to care for the Baldús estate, carrying forward more than three centuries of dedication to the land.
We are now the third generation crafting sparkling wines, driven by the same passion and respect for our craft that inspired the very first bottle. We like to think that we try to mantain this catalan craftman vintage culture


Mediterranean terroir
The estate forms a single continuous piece of land, a rarity in the region, with a natural slope of about 100 meters in elevation. The vineyards face north to north-east, which helps retain soil moisture and winter cold. The highest plots reach around 300 meters above sea level. The estate covers approximately 50 hectares, of which an average of 42 are planted each year. The remaining land is left to rest and recover soil fertility. It is divided into 41 plots, each with different characteristics.
The soils are mainly of two textural types: clay-loam (franco-argilous) and silt-loam (franco-llimous), both with a calcareous composition. These soils are typical of the region and provide good structure, drainage, and moisture retention


Traditional Viticulture
We focus on the three traditional Cava varieties: Macabeu, Xarel·lo, and Parellada. Our approach embraces simplicity and the local viticultural culture, respecting the natural rhythms and cycles of the vine as it has been done for generations.
The vineyards are planted with a spacing of 2.80 x 1.40 meters, using rootstocks 110 Richter, Ruggeri 140, 1103 Paulsen, and 41B, selected to match the soil and climate conditions of each plot. Our practices follow the natural vegetative cycles of the vine, ensuring the health and balance of the plants while maintaining the traditional character of the estate.


Fermentation methods
At Baldús, we extract only the first 45% to the 50% of the juice during pressing, ensuring clarity and balance in the must. All of our wines are fermented 100% in glazed cement tanks, separated by variety — a practice that is rare in the region.
Fermentation occurs at controlled temperatures between 13–16°C, with wines remaining in the tanks for an average of 200 days, depending on the timing of the harvest each year.
The secondary fermentation, or tirage, is carried out at the beginning of April, after which the wines rest in the bottle for at least 24 months. This extended aging allows us to produce long-aged Cavas, with a particular focus on Brut Nature
